Isn't mold bad?

The reason blue cheese is blue is because it is moldy.

Can blue cheese go bad, and if it can, how can you tell?

Because it stops smelling?

I like Brie and Camembert - runny, so runny it drips!

If you ever get a chance, try n get some Limburger - stinks to high heaven but tastes superb

I like blue cheese actually, and strong chedders.

Maybe a different sort of mold grows on it, or maybe it can't go bad... or maybe it's bad when it starts to gain intelligence and starts to swear at you.

I like Stiltons, Blue Brie and Danish blue - try this:

Slab of bread, stilton or danish blue and then spread a thin layer of honey on it. Yummy

I thought blue cheese was moldy because they stompped it with their feet and the toe jam molded CH

No, jam is sweet, cheese is a savory.... so toe jam is for toast with breakfast.
